Sweet Chilli Chicken

This is a very simple recipe that can be done with a variety of things. The two main ones I use are rice and pasta but you can also have it with potato in any form and vegetables. Whatever you have in really! The version I’m going to show you is with pasta.

You will need: 

  • Sweet Chilli sauce
  • Chicken breast
  • Pasta
  • Broccoli
  • Baby Sweetcorn
  • Butter/Margarine

First you will want to put your pasta on to simmer; I usually measure with the bowl I will be eating from but any method will do. Then you want to dice (cut into cubes) a small chicken breast and cut your baby corn into small pieces and cut the very top of the broccoli to you just have the florets.

If you don’t like these vegetables don’t worry, you can use peppers, onions, carrots – whatever you fancy – just ensure you cut these into very small pieces. Put the veg on to boil or you if you’re using peppers and onions you can cook them with the chicken.

While your veg and pasta are simmering, fry the chicken in a tiny amount of oil until golden on the outside and cooked thoroughly in the middle. You can check this by cutting a large piece in half and making sure the centre is white – not a clear pinky colour! This should take about 5 minutes depending on the size of your chicken.

Add the sweet chilli sauce to your chicken and cook for a couple more minutes, constantly moving the chicken around the pan, coating it in the sauce which will go quite sticky quickly. If it starts to go very dark in colour take off the heat.

Drain your pasta, add some butter and stir it. Add the chicken to the pasta and then add your veg on top and you’re done. Feel free to add more sauce if you feel it’s a bit plain or dry, especially when using rice.
